I'm Baaaccck with Sugar Cookies

It's been a while but I brought some sugar cookies that I know you would enjoy! Also delicious lime cream cups. These desserts were gone within 2 days and mind you I doubled the recipes.



Sugar Cookies Recipe

* About 2 dozen cookies
1 1/2 cups granulated sugar
1 cup butter or margarine, softened
1 teaspoon vanilla extract
1/2 teaspoon almond extract (optional)
1 egg
2 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon cream of tartar
                      Colored sugar for decoration


Mix powdered sugar, butter, vanilla, almond extract and egg in large bowl. Stir in remaining ingredients except granulated sugar. Cover and refrigerate at least 2 hours. 

Preheat oven at 375 degrees.

 Divide dough in half. Roll each half 1/4 inch thick with lightly dusted surface with powdered sugar. Cut into desired shapes with 2- to 2 1/2-inch cookie cutters. Sprinkle with granulated sugar. Place on cookie sheet.

Bake for 7-8 minutes or until edges become light brown. 

 

Keylime Cream Cups


*About 8 cups
1 bag Granola, grounded
1 cup Whipping cream
1/2 can Condensed Milk
3 Limes, juiced and lime zest
1/4 cup Sugar

Whip the cream with sugar to stiff peakes
Add lime juice to condensed milk and fold in whipped cream 
This is time to adjust sweetness
Put it in the refrigerator to chill (this is a fairly thin cream, use more whipped cream to thicken)
Get your cups and alternate between granola and creamTop with whipped cream and lime zest.

                   How To Put Fondant On A Cake

You want to dirty ice or crumb coat your cake and let it set, it should take about 10-20 minutes.




While your cake is setting up, at this point you want to add the color of you choice, one drop at a time to get the color you want. You want to roll out you fondant to 1/8 inch thick. it should be almost double the size of your cake. Use powdered sugar or cornstarch to roll out the fondant.



Put another coat of butter cream on your cake, this will help your fondant to stick to the cake. To put the fondant on your the rolling pin. This can be done 2 ways:

Draping over the rolling pin
Rolling it over the rolling pin


        


        or           







Carefully roll the fondant on the cake, make sure it on the whole cake evenly.



Once the fondant is on the cake, smooth the top with smoother or gently with the palm of your hand (gently). For the sides you want smooth down and GENTLY pull out until it looks like this:





Cut the access of cake, get as close to the cake as you can without cutting too much and you should be left with this:



 


If You Had The Chance To Be Financially Free, Whould You Take That Chance?


If I had the chance to be financially free I would take it. Money won't make you happy but it can help you live your dream life. The Life that You work for all your life, and possibly never get there.
  I would do it if I had kids, to make sure my children have a loving and secure life. Make sure they have whatever their needs are. I don't have kids so but I do have a 2 year old little brother who I want to have a good life, and give him what he needs.
I would also pay off all of my debt, and I know that weight would just lift off my shoulders. I can't tell you how grateful I'll be. I would make sure my family is set. I'm a generous person and I give and not as for nothing in return.

And some gifts to myself don't ever hurt.

I Think I want dabble in a little wine making. Maybe something with a little flavor like strawberry-kiwi  or something like that. Any one have any suggestions on flavors?  What steps did you take? Has anyone made wine before how did it turn out? Anyone?

Dark Chocolate Mocha Brownies

 

Ingredients

  • 1 cup Unsalted Butter
  • 2 cups White Sugar
  • 4 whole Eggs
  • 2 teaspoons Vanilla Extract
  • ⅔ cups Hershey's Special Dark Cocoa Powder
  • 2 Tablespoons Instant Coffee Granules, Or To Taste
  • 1 cup All-purpose Flour
  • ½ teaspoons Salt
  • ½ teaspoons Baking Powder

Preparation Instructions

1. Preheat oven to 350 degrees F. Grease and flour a 9×13 inch pan. (I use Pam spray for baking, which has flour in it already.)
2. In a large glass mixing bowl, melt butter in the microwave. About 90 seconds should do it—keep an eye on it. (If you do not have a glass mixing bowl, you can melt the butter separately in a microwave-safe bowl and then transfer to a large mixing bowl to mix with the other ingredients.)
3. Stir sugar, eggs, and vanilla into the melted butter.
4. Gently stir in cocoa, instant coffee (to taste—2 tablespoons will give a richer coffee flavor), flour, salt, and baking powder. Stir until just blended—do not overmix.
5. Spread batter into the prepared pan. Bake in the preheated oven for 28 to 30 minutes.
